Combine yeast and honey in tepid water and wisk until foamy
Mix in the flour with a wooden spoon and knead until smooth for around two to three minutes. Add salt and knead to incorporate.
Once dough is firm, place in a bowl covered by a slightly damp tea towel. Let rise for half an hour.
Divide dough into 8 even pieces and roll to form balls. Leave these under a tea towel to rise for another 10 minutes.
Roll the balls out thin and dimple the flattened dough with fingers.
To a pan, drizzle olive oil and let reach desired temp (medium heat). Cook Flatbreads for two minutes on both sides and serve.
