Wash and rinse dried beans.
Pressure cook all the ingredients above for 35 min.
In a separate pan, sauté onion and bell pepper until soften.
Add in your spices and garlic. Mix until fragrant.
Incorporate the sofrito into your softened/cooked beans.
Now add in tomato sauce, vinegar and sugar.
Set pressure cooker to sauté and simmer on low for 15-20 or until your desired thickness.
