  1. In a large saute or sauce pan, heat up ⅛ cup oil over medium heat

  2. Add ½ diced onion and garlic, sauté for 3-4 minutes until fragrant

  3. Add in rice, stirring so it browns but doesn't burn

  4. Add in tomato sauce, chicken broth and seasoning. Stir and cover with a lid on medium low heat for 20-30 minutes until the water has evaporated

  5. While rice is cooking, season chicken and sauté over medium high heat until an internal temperature of 165°

  6. Once your rice is done, make sure to fluff it before serving

  7. For queso, I'm using @gordo's store bought queso. You can make your own but this is so good and easy to heat up, it's not worth the extra effort

  8. To build, add rice, chicken, queso and top it with some cilantro
