Chicken And Sausage Gumbo
  1. Slice and dice the bell peppers, celery, and onion.

  2. Mince the garlic.

  3. Slice the Cajun style sausage.

  4. Shred the rotisserie chicken.

  5. In a pot, brown the sausage.

  6. Make a roux with the vegetable oil and flour, cooking for 30-45 minutes until dark brown.

  7. Add the bell peppers, celery, and onion (the Holy Trinity) to the roux and cook for 3 minutes.

  8. Add the Cajun seasoning and stir.

  9. Add the chicken stock 2 cups at a time, stirring to incorporate.

  10. Add the minced garlic.

  11. Continue adding chicken stock until desired thickness is reached.

  12. Add the sausage, gumbo file, paprika, black pepper, and bay leaves.

  13. Simmer for 2-3 hours.

  14. Serve the gumbo over rice.
