Lauren’s Curried Squash Soup
  1. Sauté onion and garlic in olive oil. Season to taste with chili flakes and curry powder, cooking until soft and fragrant.

  2. Add in chicken broth, sweet potato and squash. Simmer until vegetables are tender.

  3. Purée the soup, simmer and season to taste with additional curry powder, coriander, cumin, cinnamon, salt and pepper.

  4. Whisk in coconut milk before serving.
