Mix the pork mince, lemongrass, coriander, garlic, fish sauce, soy sauce, oil and pepper together in a mixing bowl.
Once combined, divide into 6-8 equal pieces (depending on how meaty you want each taco!). Use a fork to smoosh down a piece of mince onto a flour tortilla.
Fy on a oiled and hot cast iron pan for 4 minutes or until brown (and almost charred). Flip and fry on the tortilla side for an additional 2 minutes until the tortilla starts becoming crispy.
To assemble, top the meat side with carrots, cucumber, chilli, mayonnaise and coriander leaves (and paté if ya fancy). Fold and devour immediately!
