Smash Banh Mi Tacos
  1. Mix the pork mince, lemongrass, coriander, garlic, fish sauce, soy sauce, oil and pepper together in a mixing bowl.

  2. Once combined, divide into 6-8 equal pieces (depending on how meaty you want each taco!). Use a fork to smoosh down a piece of mince onto a flour tortilla.

  3. Fy on a oiled and hot cast iron pan for 4 minutes or until brown (and almost charred). Flip and fry on the tortilla side for an additional 2 minutes until the tortilla starts becoming crispy.

  4. To assemble, top the meat side with carrots, cucumber, chilli, mayonnaise and coriander leaves (and paté if ya fancy). Fold and devour immediately!
