Chicken Poblano Black Bean Soup
  1. Melt butter in a large pot. Add onions, poblanos, and half of the spice blend. Cook 5-6 minutes until lightly browned.

  2. Add chicken, black beans, corn, broth, and remaining seasoning, and stir to combine. Turn the heat to medium-high, bring the soup to a simmer (uncovered) for 15 minutes.

  3. Stir in the heavy cream and cheese. Once the cheese is melted, bring soup to simmer again.

  4. Let the soup simmer for another 15 minutes, then stir in the lime juice and season with salt and pepper to taste.

  5. Garnish with cilantro.
