Ingredients:
2 medium banana, bananas, peeled, and thinly sliced.
½ cup extra-virgin olive oil
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
½ cup regular or light sour cream. You can substitute with Greek yoghurt as well.
1 ½ cups, all purpose flour
1 teaspoon baking soda
¼ teaspoon salt
½ cup chocolate chips or nuts (optional)
Preheat oven to 350
Grease 9 x 5 loaf pan
Slice banana bananas, thinly set aside
In a large bowl, add oil, sugar, eggs, and mix well
Add vanilla to mix and blend
Add sour cream and mix until combined
Add sliced bananas, flour, baking soda, salt, and chocolate chips
Mix until incorporated
Pour into loaf pan and bake approximately 45 to 55 minutes. Tester should come out clean.
