Preheat the oven to 300 degrees.
Line an 8×8 pan with parchment paper.
Mix crust ingredients together, and press into the pan.
Bake for 10 minutes.
Preheat oven to 325 degrees.
Beat cream cheese, sugar, and vanilla until blended.
Add eggs, beat just until blended.
Pour cheesecake mixture into crust.
Bake for 40 minutes, let cool.
Refrigerate for 1 hour.
Cut into bars.
Using a melon scoop, scoop out the center of each bar.
Spoon in strawberry pie filling.
Melt white chocolate chips in the microwave 15 seconds at a time, stirring after each interval.
Drizzle the white chocolate over each bar.
Serve!
