Polish Potato Babka (babka Ziemniaczana)
  1. Preheat your oven to 375°F (190°C). Grease a baking dish with butter.

  2. In a skillet, cook the chopped bacon until crispy. Remove with a slotted spoon and set aside.

  3. Grate the potatoes and onions using a fine grater. Place them in a large bowl and squeeze out any excess liquid.

  4. Add the crispy bacon, eggs, potato starch, yogurt, marjoram, salt, pepper, and nutmeg to the grated potatoes and onions. Mix well until all ingredients are combined.

  5. Pour the mixture into the prepared baking dish and spread it out evenly. Bake in the preheated oven for 1 hour, or until the top is golden brown and crispy.

  6. Let the babka cool for a few minutes before slicing. Serve hot with a dollop of sour cream or yogurt.
