In a bowl mix both meats together.
Add in eggs, breadcrumbs, salt, pepper, parsley, and Parmesan cheese.
Mix well, and lay meat onto a piece of parchment paper.
Flatten and stretch meat out.
Top meat with prosciutto.
Cover prosciutto with provolone slices.
Begin rolling meat into a roll.
Sprinkle flour over meat roll so it’s well covered.
Add meat roll to pan with some olive oil and brown all sides until golden.
Add half a cup white wine and half a cup vegetable broth to pan.
Reduce and cover with lid and cook on low for 40 minutes.
You can use the broth and create a gravy.
Slice and serve.
