Jodi's Chicken Tortilla Soup
  1. Combine chicken stock, diced tomatoes, and salsa on soup pot. Cover and let it come to a boil.

  2. When the stock mixture comes to a boil, add the chicken. Reduce heat to a low simmer until the chicken is cooked through, 2-3 minutes.

  3. Stir in the black beans and let them heat through.

  4. Ladle into bowls and serve garnished with chips, cheese, green onions and avocado
