Cooked for over 30 hours, this one has diced potatoes, 1 can of lentils, 1/2 cauliflower and instead of adding diced butter, I added one can of coconut cream (also instead of coconut milk) at the endafter letting it cook for 15+min. I also swirled in some of my home made Greek yoghurt right before serving, very very tasty!
Made this with potatoes and lentils instead of cauliflower this time, cooked on low for 30h (potatoes needed the extra time), potatoes kept their shape but were a perfect creamy consistency when chewed on, so good!didn’t get a photo of it cooked and plated as we were too excited. So very yum! I add 2 teaspoons of chilli powder and find it just right, could even go a half teaspoon more, add more Greek yoghurt if too spicy for you!
