Nicole from Kalejunky brings us this interesting dish. Make sure to use fresh coconut and I also suggest using sweetened as well. At my high elevation things tend to get to hot in the pan. I had to reduce my heat to a simmer and add more time to adjust for that. It was good and

Cinco de Mayo, a prominent holiday in Mexico, commemorating the battle of Puebla. Between Mexican and French forces, during the Mexican war of independence. Newly elected President Benito Juarez tasked General Ignacio Zaragoza to march on and fortify the city of Puebla with an out numbered force. It was a decision made in anticipation of a large French force commanded by General Charles de Lorencez preparing to assault the city. On May 5th in the aftermath of an entire day of fighting, General Charles de Lorencez realized he was suffering far more casualties than that of General Zaragoza, and decided to retreat. A major win for Mexican forces. A tip of the hat to those brave men. Tonight my wife and I will enjoy Chicken Enchiladas and Mexican rice from scratch. Rachel Cooks dose an excellent job of explaining Tortillas. To be honest, until I saw her video I was lost. Isabel does a bang up job herself. All four recipes will be located on my profile page. I made this soup thinking, eh, just another bowl of soup. It was overcast and gloomy, just a chance to use a frozen ham bone. No photos required.
I want to admit, the attached photo is the one from the linked website Wholesome Made Easy. It frustrates me that I made no attempt to snap a photo. This is not Ham and Navy Bean Soup. This is a magic potion created to warm a soul. Valerie brings us this cheap and simple gem. Especially if you own “Magic Pot”.
It was so good. I joined her page for the only reason but to give her five stars. Guys, this soup is worth the go. Even if you have to soak over night.

First try. This dish had me excited to put on the table. But tasting and adjusting through out the cook is difficult. When it came time to taste and adjust, well let’s just say all you could do was add salt at the table. Needless to say I was disappointed, this time. In my personal opinion, smoked paprika and a little turmeric are much needed. I had some peeled potatoes in my refrigerator and decided to add them to the dish. It was a good meal. It just needs a little extra.

Holy heffer, these meatballs own the podium. Well, next time I might add 1 ground clove. My wife and I debated what it reminded us of, then I said “French Canadian Tourtiere.” And we both threw up white flags. Serve these with McDonald’s fries if you want, but I chose rice. Mash would be a great choice to.
